The milk comes from the cow herd that grazes in the summer on the lush pasture grass in the valley. It's pasteurized at 74°C for 16 seconds, allowing to deliver milk in a natural state. That means the milk not only tastes fresh, it is fresh. And because it’s non-homogenized, the cream rises to the top and separates.
